Pici with a Garlic and Chilli Tomato Sauce
Pici All’Aglione
Pici are like hand-made spaghetti. The trick is to roll them out long, thin and uniform.
Ingredients
For pasta:
- 500g Roma Pizza and Pasta flour
- Water
- 1 tbsp olive oil
- Pinch salt
For sauce:
- 2 garlic cloves ;
- 2 tbsp olive oil;
- Chili flakes
- 1 can Roma Chopped Tomatoes (or tomato paste);
- Pinch salt.
Method
For pasta:
- Combine water, olive oil and a pinch of salt with flour.
- Knead until smooth and elastic. Leave rest 30 minutes.
- Boil in salted water for a few minutes.
For sauce:
- Peel garlic and mince.
- Sauté in olive oil and add tomatoes (if using paste add a bit of broth or water from the pasta pot for pasta).
- Allow to simmer for at least 10-15 minutes. Add a generous amount of chili.
- Pour over pici, garnish with grated pecorino and serve.
