Pici with a Garlic and Chilli Tomato Sauce

Pici are like hand-made spaghetti. The trick is to roll them out long, thin and uniform.

Pici with a Garlic and Chilli Tomato Sauce

Ingredients

    For pasta:

    1. 500g Roma Pizza and Pasta flour
    2. Water
    3. 1 tbsp olive oil
    4. Pinch salt

    For sauce:

    1. 2 garlic cloves ;
    2. 2 tbsp olive oil;
    3. Chili flakes
    4. 1 can Roma Chopped Tomatoes (or tomato paste);
    5. Pinch salt.

Method

    For pasta:

    1. Combine water, olive oil and a pinch of salt with flour.
    2. Knead until smooth and elastic. Leave rest 30 minutes.
    3. Boil in salted water for a few minutes.

    For sauce:

    1. Peel garlic and mince.
    2. Sauté in olive oil and add tomatoes (if using paste add a bit of broth or water from the pasta pot for pasta).
    3. Allow to simmer for at least 10-15 minutes. Add a generous amount of chili.
    4. Pour over pici, garnish with grated pecorino and serve.
