Fresh Spezzatino of Tuna in White Wine with Olives
Spezzatino Di Tonno Fresco in Bianco Con Le Olive.

Ingredients
- 500g fresh tuna, cleaned and cut into large pieces
- 1 carrot
- 2 ribs of celery
- 1 white onion
- a Bushel of parsley
- Tbsp flour
- Glass of white wine
- 3 cloves of garlic
- Jar green olives (6/7 per person)
- Roma Extra Virgin Olive Oil.
Method
- Dice vegetables to a small dice, leaving the garlic as whole cloves.
- Brown in oil for 5 minutes over a moderate heat.
- Lightly flour tuna and add to the pan.
- Season with salt and pepper and cook in olive oil until done.
- Sprinkle with white wine and add chopped parsley and olives.
- Serve immediately!
