Fresh Spezzatino of Tuna in White Wine with Olives

Ingredients

  • 500g fresh tuna, cleaned and cut into large pieces
  • 1 carrot
  • 2 ribs of celery
  • 1 white onion
  • a Bushel of parsley
  • Tbsp flour
  • Glass of white wine
  • 3 cloves of garlic
  • Jar green olives (6/7 per person)
  • Roma Extra Virgin Olive Oil.

Method

  1. Dice vegetables to a small dice, leaving the garlic as whole cloves.
  2. Brown in oil for 5 minutes over a moderate heat.
  3. Lightly flour tuna and add to the pan.
  4. Season with salt and pepper and cook in olive oil until done.
  5. Sprinkle with white wine and add chopped parsley and olives.
  6. Serve immediately!
