Courgette and Tomato Sauce with Pasta Wheels
This sauce shows how versatile a basic tomato sauce is. I replace the courgette with aubergine for a lovely rich, silky sauce. For the children, I grate carrot and courgette into the sauce. The carrot sweetens the sauce beautifully and there are rarely objections to the quantity of hidden vegetables in the sauce!
Serves 4
Ready in 10 minutes.
Ingredients
- 1 courgette, diced
- 2 tbsp Roma Extra Virgin Olive Oil
- 1 onion, diced
- 2 cloves garlic, minced
- 400g Roma Chopped Tomatoes
- ½ tsp sugar
- 1 small sprig thyme
- Salt and Pepper
- 300g Roma Route
Method
- Heat the oil in a saucepan, add the onion and thyme and sauté over a low heat until soft until the onion is softened. Add the garlic and courgette and cook for 2 minutes.
- Add the tomatoes and sugar, and cook for 7 - 8 minutes. Season with salt and pepper.
- Cook the pasta as per the instructions on the packet and serve with the courgette and tomato sauce
