Courgette and Tomato Sauce with Pasta Wheels

This sauce shows how versatile a basic tomato sauce is. I replace the courgette with aubergine for a lovely rich, silky sauce. For the children, I grate carrot and courgette into the sauce. The carrot sweetens the sauce beautifully and there are rarely objections to the quantity of hidden vegetables in the sauce!

Courgette and Tomato Sauce with Pasta Wheels

Ingredients

  • 1 courgette, diced
  • 2 tbsp Roma Extra Virgin Olive Oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 400g Roma Chopped Tomatoes
  • ½ tsp sugar
  • 1 small sprig thyme
  • Salt and Pepper
  • 300g Roma Route

Method

  1. Heat the oil in a saucepan, add the onion and thyme and sauté over a low heat until soft until the onion is softened. Add the garlic and courgette and cook for 2 minutes.
  2. Add the tomatoes and sugar, and cook for 7 - 8 minutes. Season with salt and pepper.
  3. Cook the pasta as per the instructions on the packet and serve with the courgette and tomato sauce
